Indonesian Chicken Noodle Broth

When your body is feeling a bit under the weather and you do not feel like eating, the following Indonesian style noodle soup is the one thing your body needs.  With its slightly spicy and rich tasting savory soup, this dish will help to increase your appetite.  The noodles are complete with chicken, dried shrimp and spinach.

 

Ingredients:

  • 250 g egg noodles – fresh

 

Soup:

  • 1 tbsp vegetable oil 
  • 1 clove garlic, finely chopped 
  • 75 g of chicken meat, small slices 
  • 2 pieces of chicken liver, small slices 
  • 750 ml chicken broth 
  • 75 g leaf spinach/ mustard , small slices 
  • ½ tsp pepper 
  • 1 tsp salt 
  • 1 tbsp cornflour, dissolved in a little water 
  • 1 egg, beaten

 

Garnish:

  • 2 tablespoons fried onions

 

Directions:

1.  Saute garlic until fragrant. 

2.  Add in the chicken meat and chicken liver, stir until stiff. 

3.  Pour the broth and bring to a boil. 

4.  Mix in the spinach and seasoning, bring to a boil. 

5.  Mix in the egg noodles and beaten egg, stir in the cornflour until it dissolves.  Stir all well until mixture becomes thick.

6.  Remove and serve hot.
